Quinta Quinoa Chicken Bake

Ingredients

1 cup Quinta Quinoa (rinsed and uncooked)
1 cup yellow onion (minced)
2 medium red peppers chopped into bite size pieces
3 large chicken breasts cut into bite size pieces
1/2 cup hoisin sauce
1 tablespoon minced garlic
2 tablespoons soy sauce
1/2 tablespoon fresh ginger minced
1 cup water
1 cup cashews roasted
Green onion (optional)

Directions

Preheat oven to 375°F
Spray your casserole dish with cooking spray
Put 1 cup uncooked Quinta Quinoa in the bottom of the casserole dish
Put a layer of the diced onion and red pepper
Put your chicken on top of the diced onion and red pepper
Mix together the hoisen sauce, minced garlic, soy sauce, minced ginger and 1 cup of water
Pour the mixture over the chicken evenly
Bake at 375°F for 45 minutes uncovered
Remove from the oven and add the cashews, then bake for another 10 minutes
Garnish with green onion (optional) or just dig in!
