When we got sick, our #grandma used to tell us that chicken soup was the food for the soul and it would help us get better💚🌱. We believed her all the way. So, we adapted her delicious and miraculous soup to meet Quinta Quinoa’s standards.
Ingredients
2 cups cooked chicken
2 cups chopped carrots
1 cup chopped onion
1 cup chopped celery
6 cups chicken stock
1 cup milk
½ cup flour or cornstarch
½ cup quinoa uncooked
¼ tbsp fresh squeezed lemon
2 tbsp olive oil
3 cloves garlic
2 bay leaves
2 tsp lemon zest
1 tsp tarragon
1 tsp chives
½ tsp red pepper flakes
Pinch of kosher salt and fresh pepper
Directions
Heat oil in large stock pot on medium- high heat
Saute carrot, celery and onion 8-10 minutes
Add stock to the pot with the carrot, celery, and onion
Add garlic and red pepper and cook 1 minute
Add bay leaves, tarragon, salt and pepper
Whisk together flour and milk and pour slowly into soup
Bring mixture to boil then pour in Quinoa and reduce heat
Cook 2 minutes then stir in chicken, lemon juice, zest and chives
Heat and serve.

Looks and sounds wonderful. When does the stock get added? That is left out in the directions.
