Quinoa Greek Salad:
Dressing:
- 1 tsp honey
- ¼ cup olive oil
- Pinch of salt & pepper
- 1 tbsp fresh dill
- 1 tsp oregano
- ¼ cup red wine vinegar
- Juice of ½ lemon
Salad:
- 1 cup chopped cucumbers
- 1 diced red onion
- ½ cup crumbled feta
- 3 cups cooked quinoa
- 1 cup Kalamata olives
- 1 cup chopped parsley
- 1 cup small tomatoes halved
- 1 diced red pepper
Mix salad ingredients, add dressing and let stand for thirty minutes before serving.
