Colourful Quinta Quinoa Summer Salad
Quinta Quinoa is a delicious summer salad ingredient. This recipe was created by taking the best features of quinoa salads enjoyed by our staff in the past and combining them to make an extra yummy summer salad.
Ingredients:
Salad
1 1/2 cups of Quinta Quinoa (uncooked)
1 red pepper, yellow pepper and orange pepper (each diced)
1/2 cup of green onion
A few sprigs of parsley
1/2 cup of tomato (diced)
Fresh lemon juice
Dressing
2 cloves of garlic
1/2 cup of olive oil
1/2 cup of apple cider vinegar
Salt and pepper to taste
Directions:
Cook Quinta Quinoa according to package directions and set aside to cool.
While the quinoa cooks, dice the peppers, green onion, tomato and parsley and mix into a large bowl.
To begin the dressing mince the garlic and in a medium sized bowl add the garlic to the olive oil and vinegar. Add salt and pepper to taste and mix thoroughly.
Once the quinoa has cooled, add it to the bowl with the diced ingredients. Top with dressing and mix to cover. Cool in the fridge and allow flavours to marinate for at least an hour before serving. Top with a squeeze of fresh lemon juice!
