Ingredients
Dressing:
¼ cup extra virgin olive oil
1 tablespoon fresh lime juice from one large lime
½ teaspoon kosher salt
½ teaspoon freshly ground black pepper
½ teaspoon ground cumin
Quinoa Salad:
1 cup dry Quinta Quinoa
1½ cups water
½ teaspoon kosher salt
1 (15 oz) can black beans, drained and rinsed
1 (15 oz) can yellow corn kernels, drained and rinsed
½ cup finely chopped red onion
½ cup finely chopped fresh cilantro
Directions
In a large serving bowl, whisk together the olive oil, lime juice, kosher salt, pepper and cumin.
Cook quinoa according to package directions.
When quinoa is ready, add it to the dressing in the bowl. Add the beans, corn, red onion and cilantro. Mix everything with a large spoon or a wide spatula. Serve immediately.
