Tuna Quinoa Patties

We are always hungry at #QuintaQuinoa. We are so hungry we decided to cook some easy and delicious Tuna #Quinoa Patties for dinner! Find Quinta Quinoa at @longosmarkets in #Guelph.

Servings: 24 patties (nugget size), 10-12 burger size.
Time: 20-25 min

Ingredients
2 cups of cooked Quinta Quinoa
2 cans of Tuna in Water
2-3 bunch of Green Onion or Scallion
2/3cup of Bread Crumbs
2 Eggs
1 tbsp. of Salt
1 tbsp. of Pepper
1 tbsp. of Garlic Powder
½ tbsp. of Cayenne Pepper

Instructions
For the quinoa
Rinse quinoa thoroughly with cold water
Add 1 cup of Quinta Quinoa and 1 ¼ cup of water or broth
Bring to a boil for 2 min
Reduce heat and simmer covered for 12 to 14 minutes

For the patties
In a bowl, mix the quinoa, tuna, green onion, bread crumbs, and spices
In a separate bowl, whisk eggs and add them to the previously made mix
Mix everything evenly
Make patties
In a skillet pan, heat oil over medium heat and place the patties
Cook each side for 5-10 minutes (or until golden).
Serve with your choice of side dish.

Notes:
For this recipe, the patties were made nugget sized. This allowed having 24 patties.
These patties can be frozen and used for meal prep.
This recipe allows creativity! Add onions, peppers, corn, you name it!
