Miracle Quinoa Salad

In 2007 Quinta Quinoa’s CEO and founder, Jamie Draves suffered a ‘health crisis’ (idiopathic pancreatitis). He took the initiative to seek out traditional and alternative health care professionals to bring his health back. Through this process, he built a “Healthcare Team” which comprised of 12 health professionals of varying expertise and experience. Together they developed a personal health plan that focused on a diet to improve digestion, immune system function and overall health. Quinoa was one of the Superfoods included in his personalized plan. This plan allowed him to get healthier and then to create the first Ontario Grown Quinoa and develop delicious recipes like this one! The Miracle Salad has this name for that reason. Jamie ate this salad every day during his recovery. We hope you enjoy it as much as we do!

Ingredients

  • 900g bag of Quinta Quinoa
  • 6 cups of water
  • 3 cloves of garlic
  • 1 cup of olive oil
  • 1.5 cup of apple cider vinegar
  • Herbamare
  • 1 tbsp for the water
  • 1 ½ Tbsp for the dressing
  • 250 g of Green Onion (chopped)
  • 2 red peppers
  • 2 yellow peppers
  • 300g of Grape tomatoes
  • 3g of chives (chopped)
  • 120g of parsley
  • 4g of mint (without the stems)
  • 1/5 Tbsp of black pepper.

Instructions

For the Quinoa

  1. Boil the 6 cups of water with 1 Tbsp of Herbamare
  2. Rinse 900g of Quinta Quinoa Thoroughly and place in the boiling water
  3. Re-boil, turn to allow simmer and then turn off when the top is no longer moist
  4. Stir quinoa and allow to lose some moisture and cool for 60 minute
  5. Stir every 20 minutes.

For the Dressing

  1. Mince 3-4 cloves of garlic add it to a bowl
  2. Add the olive oil, apple cider vinegar, Herbamare, and black pepper
  3. Stir and allow to marinate for 30 minutes.

Preparing the Vegetables

 

  1. Wash, rinse, remove tips, and dice the green onion into small pieces
  2. Wash, rinse, remove stems and seeds, and dice the red and yellow peppers into small pieces
  3. Wash, rinse, remove tips, and dice grape tomatoes into 8 pieces
  4. Wash, rinse, remove tips, and cut the parsley, chives, and mint into small pieces

 

Putting together the Miracle Salad

  1. After the quinoa is ready and without moisture, add the dressing, stir, allow to marinate for 30-60 minutes.
  2. Add chives and mint to the quinoa mix
  3. Add vegetables to the mix

Tips

  1. If you see foam while cooking the quinoa, try to remove it with a spoon.
  2. The taste of this salad increases with time. We recommend preparing it a night before your event. This will allow the quinoa to soak all the flavours!
  3. This salad can be stored in your freezer. Perfect for meal prep!
