We finally got up-to-date with our kitchen gadgets by buying an Instant Pot. The first thing we tested was how well it cooks our Ontario-grown Quinta Quinoa, and it passed! Check out this delicious but easy Instant Pot Chicken Quinoa Stew recipe. We promise you will love it!
Ingredients
- 1 Tbsp of Olive Oil
- ½ Large White Onion (chopped)
- 2 Cloves of Garlic
- ½ Kg of Chicken Breast
- 1 Cup of Marinara Sauce or Tomato Sauce
- 1Tbsp of Pesto
- 1 Can of Chicken Broth
- 1 Can of Water
- ½ Cup of Quinta Quinoa
- Onion Powder
- Garlic Powder
- Oregano
- Cumin
- Salt
- Pepper
Instructions
- In the Instant Pot, pour the olive oil and press the sauté option.
- When hot, place the onion and garlic and sauté them for 2 minutes or until brown.
- Place chicken breast on top of the onion and garlic.
- Pour the marinara sauce, the pesto and spices.
- Pour the chicken broth and water into the Instant Pot.
- Rinse the Quinta Quinoa thoroughly and place it into the pot.
- Close the Instant Pot lid, with the closed valve, and press “Pressure Cook” and set the timer for 8 minutes.
- When the time passes, carefully release the valve until there is no vapour going out.
- Take out the chicken breasts and shred them with two forks and return to the Instant Pot.
- Mix everything and serve!
