Quinoa Portobello Salad

Ingredients

½ cup #QuintaQuinoa

1 small carrot, grated

½ zucchini cut into slices

½ chopped onion

3 garlic cloves, crushed

½ cup chopped portobello  mushrooms

2 tablespoons of olive oil

1 pinch of black pepper

1 pinch of salt

Sunflower seeds

Poppy seeds

Other seeds (optional)

1 cup of water (8 oz)

 

Directions:

✔Step 1: Rinse our #QuintaQuinoa with warm water and put it in a casserole🥘

✔Step 2: Add a cup of water and a pinch of salt. Let it cook for 15 minutes or until it’s soft. Let it drain🕑

✔Step 3: Meanwhile, add olive oil to a pan and sauté the garlic and onion until it’s soft. Add the zucchini and mix it all🥣

✔Step 4: When the zucchini is soft, add the mushrooms and cook for another 2-3 minutes. Don’t forget to stir the mix every once in a while! 🥄

✔Step 5: Add salt or pepper to taste and finally, the cooked #QuintaQuinoa. Mix it all and voila! 🍽 Don’t forget you can eat this salad hot, warm or cold.

If you prefer, you can add some #QuintaQuinoa on top or some olive oil🥗
