Ingredients
- ⅓ cup uncooked quinoa
- 1/3 cup water
- 2 dates, pitted
- 3 dried figs
- 1/3 cup whole almonds, toasted
- ⅓ cup unsweetened shredded coconut, toasted
- vanilla extract
- Pinch of salt
- ½ teaspoon ground cinnamon
- ¼ cup small dark chocolate chips
- ½ teaspoon coconut oil
Directions
- Line a baking sheet with parchment paper and put it aside.
- In a small saucepan, add quinoa and water and boil. Let it simmer in low heat for 10 minutes. Let it cool.
- In a medium-sized skillet, add the cooked quinoa and toast it until crispy and slightly golden.
- Add the dates and dried figs to a food processor bowl. Pulse until you have a sticky paste.
- Then add the almonds and pulse until finely chopped. Note: don’t pulse too much, or you will end up with an almond meal.
- Add the date-fig paste, the coconut, vanilla extract, salt and cinnamon. Pulse until thoroughly combined.
- In a bowl, scoop one tablespoon of the dough and, with wet hands, start forming balls. If the mixture doesn’t come together easily, you can add some water. Place them in the prepared sheet.
- In a microwave-safe bowl, combine the chocolate chips and the coconut oil—microwave on High for 40 seconds or until the chocolate melts.
- Stir, and if it needs more time, microwave for 10 more seconds.
- Dip the quinoa bites into the chocolate mixture. Wipe off the excess.
