Ingredients:
150gr of #QuintaQuinoa⠀⠀⠀⠀⠀⠀⠀⠀⠀
3/4 cups of water⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tomato⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 yellow pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
150gr of cooked black beans⠀⠀⠀⠀⠀⠀⠀⠀⠀
150gr of corn⠀⠀⠀⠀⠀⠀⠀⠀⠀
30 ml of olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and black pepper⠀⠀⠀⠀⠀⠀⠀⠀⠀
Jalapeno pepper (if you’d like to spice it up a bit)⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preperation:⠀
Cut the tomato and stir-fry it in olive oil for a couple of minutes. Add salt, #QuintaQuinoa and the water.⠀⠀⠀⠀⠀⠀⠀⠀⠀
Wait until the mixture boils and simmer for 10 to 12 minutes until the liquid is absorbed. Meanwhile, chop the yellow pepper (remember to take out the veins and seeds) and stir fry it with olive oil for 10 minutes, if you’d like to try some extra spicy taste, chop the jalapeno and fry it all together!⠀⠀⠀⠀⠀⠀⠀⠀⠀

Then add the beans and the corn. Cook it for 5 minutes and add salt, black pepper and finally, the quinoa mixture⠀⠀⠀⠀⠀⠀⠀⠀⠀

Mix, simmer for 5 more minutes and take it out of the fire. Let it cool and serve it with some extra olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
