Today, we are giving you this great, fun, and healthy recipe that you and your kids are going to love!
Time: 40min
Servings: 15 nuggets approximately (depends on the size)
Difficulty: easy
Ingredients:
- 1 cup of Quinta® Quinoa (un-cooked)
- 2 Medium eggs
- 1 garlic clove (minced)
- 1 tablespoon of olive oil
- 1/4 of a red onion (or the one you prefer)
- Salt and pepper (just a pinch of each!)
Optional: 1/4 cup of oatmeal
Preparation:
1. This time, you’ll need to cook the quinoa with a pinch of salt. Remember, rinse your quinoa, then 1 1/4 cup of water for every cup of #QuintaQuinoa. Bring it to boil and then, simmer for 12-14min. Try to use a medium-size pot, since everything is going to be mixed there
2. Using a cutting table, mince/cut the garlic and the onion in small cubes
3. Stir-fry them in a pan with the olive oil
4. In the same pot where you cooked the quinoa, add the onion/garlic mix. Stir it very well, add more salt and some pepper to your taste. Let it cool down
5. In a side bowl, beat up the eggs. Then add it to the quinoa pot
6. Now, its time for the fun! take a small amount of mixture, make balls with it and then smash them a little bit to make the nugget form. If they’re too wet, add a bit of oatmeal
7. In a pan, fry them on olive oil until they get golden and crunchy, the stove must be at medium heat. (You can also air-fry them!)
Don’t forget to eat them with your favourite sauce!
