Ingredients:⠀⠀
⠀⠀⠀⠀⠀⠀⠀
For the crust:⠀⠀⠀⠀⠀
- 1 cup of #QuintaQuinoa, uncooked (but rinsed and drained)⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 cup of almond flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tablespoon of cornstarch⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 teaspoon of salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 2 tablespoons of coconut or sunflower oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 tablespoon of sugar⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1 Medium egg⠀⠀⠀⠀⠀⠀⠀⠀⠀
- Butter spray⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
For the pie filling (this crust works perfectly for a lot of creams, but today we recommend this one):⠀⠀⠀⠀
- 1 can of condensed milk⠀⠀⠀⠀⠀⠀⠀⠀⠀
- 1/2 up to 1 cup of #lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation:⠀
1. Preheat the oven to 350°F⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a baking sheet covered with wax paper, spread the quinoa and bake it for 25 up to 35 min⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Don’t forget to check, stir, and move the seeds until they’re golden-coloured. Let them cool for 10min out of the oven, don’t turn it off!⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. In a blender, add the quinoa, flour, cornstarch, salt, sugar, oil, and egg. Blend it until it mixes all together and gets thick and smooth⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Spray butter in a 9″ glass baking pan. Pour the batter and spread it with your hands, covering the sides of the pan and pressure⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. Take it back to the oven and bake it for 10-15min. Be careful, since it might be very hot⠀⠀⠀⠀⠀⠀⠀⠀⠀
7. Meanwhile, pour the condensed milk in a bowl. Add the lemon juice, to your taste, stir very well⠀⠀⠀⠀⠀⠀⠀⠀⠀
8. When the crust is ready, take it out of the oven. Let it cool and add the lemon cream. Refrigerate and then enjoy it! A different and healthier way to eat delicious pie!⠀⠀⠀⠀⠀⠀⠀⠀⠀
