Ingredients:
- 2 cups of #QuintaQuinoa (leftovers are just lovely)
- 1 tablespoon of olive oil
- 2 garlic cloves, diced
- 4 slices of ginger
- 1/2 up to 1 small red chilli pepper, diced
- 5 up to 10 coriander strips, thinly chopped
- 1/2 of a Green bell pepper, diced
- 1/4 up to 1/2 of Green beans, chopped
- 2 medium zucchini, chopped
- 3 scallions, thinly sliced
- 1/2 to 1 tablespoon of tamari or soy sauce
- 1/2 tablespoon of sesame oil.
Preparation:
Be sure to have everything cut, ready, and on hand before we start!
1. Preheat a wok pan over medium-high heat
2. Add the olive oil to the hot pan, and fry the ginger and garlic for half a minute, stirring it all together. Add the chilli pepper and coriander, and beat it for 1 minute
3. Add the pepper, tossing it for 2 minutes. Add the zucchini and onions, tossing them for a couple more minutes
4. Push all the veggies to the edge, add the sesame oil, and then add the quinoa. Stir it all together, turn the heat low and add the tamari all over it. Wait 2 minutes more, and turn it off. Ready to serve!
