Quinta Quinoa Zucchini Boats

Of course, all of them include our favourite ingredient: quinoa! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of cooked #QuintaQuinoa ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 medium zucchinis ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of lemon cashew dressing, you will need:⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of raw cashews ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of water⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tablespoons of lemon juice⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of fresh basil⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of fresh chives⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of maple syrup⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 teaspoon of sea salt⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ground black pepper to your taste⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Preheat to oven to 350F. Spread the oil on a 13×9 baking dish. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Chop the ends of the zucchini off and then slice them in two halves lengthwise. Scoop out the pulp using a spoon until you have little boats formed. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Now, mix the pulp with the already cooked Quinta® Quinoa in a bowl, and then fill the boats with it. Place the boats with the filling in the baking dish. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Take the baking dish to the oven and bake the zucchini for 20 up to 25 min, until the quinoa starts to get a Brown-coloured look. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Meanwhile, prepare the dressing. Add the cashews, water, lemon juice, basil, chives, maple, and salt to a blender. Blend it up and then season with pepper. Pour it into a glass. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. When the time is over, take the zucchini out of the oven and set aside for 5 minutes; when they cool down a bit, serve and top it with the dressing. And that’s it! Doesn’t it sound incredible? Zucchini is a very versatile ingredient and taste delicious with our Quinta® Quinoa.
