Ingredients:⠀⠀⠀
⠀⠀⠀⠀⠀⠀
1 cup of #QuintaQuinoa (uncooked)⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 cups of diced rotisserie chicken⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 + 1/4 cup of chicken broth⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups of tomatoes (crushed)⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tablespoons of tomato paste⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tablespoons of balsamic vinegar⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of half and half⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of grated parmesan⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of shredded mozzarella⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of grape tomatoes (halved) salt and pepper red pepper flakes (optional) fresh basil⠀
⠀⠀⠀⠀⠀⠀⠀⠀
Preparation:⠀⠀
⠀⠀⠀⠀⠀⠀⠀
1. Preheat the oven to 375F⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Let’s cook the quinoa with the chicken broth: In a small saucepan, add the Quinta® Quinoa with the liquid, and bring it to boil. Cover and let it simmer for 12-14minutes (or until there is no moisture left). Turn it off and let it sit⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Using another saucepan, add de crushed tomatoes, tomato paste, and vinegar. Turn the stove on to medium heat and let it simmer for a couple of minutes. Add the half and half, salt, pepper, and red pepper if you want. Stir from time to time, so it doesn’t stick to the bottom and turn it off⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. In a big bowl, mix the chicken, quinoa, cheese, and sauce⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Prepare a 9×13 baking dish, pour the mixture, and add some extra mozzarella and grape tomatoes⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. Bake it for 12-14min until the mozzarella is melted. Take it out and top it with fresh basil leaves⠀⠀⠀⠀⠀⠀⠀⠀⠀
