Sometimes we’re just craving something different for lunch! Today, we want Mexican food and maybe a Margarita cocktail (we might leave the drinking for later in the day, though)! Check out this Mexican Pan with, of course, your favorite Quinta Quinoa! ⠀⠀

Ingredients: ⠀⠀⠀
⠀⠀⠀⠀⠀⠀
1 cup of #QuintaQuinoa uncooked ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 + 1/4 cups of vegetable broth ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can of black beans, drained and rinsed
1 can of fire-roasted diced tomatoes
1 cup of corn ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 garlic cloves, minced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 jalapeno, minced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 avocado, peeled and diced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tablespoons of fresh cilantro leaves, chopped
1 teaspoon of chili powder ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 teaspoon of cumin⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and ground black pepper
Juice of 1 lime ⠀⠀
⠀⠀⠀⠀⠀⠀⠀
Preparation: ⠀
⠀⠀⠀⠀⠀⠀⠀⠀
1. Using a large skillet, set the stove over medium heat and spread olive oil, and then add the garlic and jalapeno. Stir it until it’s fragrant.⠀⠀⠀⠀
2. Add to the skillet the Quinta® Quinoa (rinsed), vegetable broth, beans, tomatoes, corn, chili, cumin, salt, and pepper. Bring it to boil and then cover it, reduce de heat on the stove and let it simmer for 12-14min. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Serve and top with avocado, lime juice, and cilantro. This recipe is better to eat it fresh! But don’t worry, it’s so yummy you’ll find yourself cooking it weekly. ⠀
