Turkey and Quinta Quinoa Casserole

If you haven’t noticed, #Thanksgiving is just around the corner! Do you want to keep up with the turkey tradition but want to switch things up? We have an excellent idea for you! And, of course, it includes Quinta® Quinoa!⠀⠀⠀

⠀⠀⠀⠀⠀⠀
Ingredients:⠀⠀⠀⠀

⠀⠀⠀⠀⠀
2 cups of cooked #QuintaQuinoa ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 lbs ground turkey ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 chopped onion ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4 garlic cloves, minced ⠀⠀⠀⠀⠀⠀⠀⠀⠀
11 oz of baby spinach ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can of tomato paste ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of whole wheat bread crumbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 cups of shredded cheddar or mozzarella cheese ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 teaspoons of dried basil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 teaspoon of dried thyme ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of olive or avocado oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 green onions and ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 diced tomatoes, for garnish ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and pepper to your taste

Preparation ⠀⠀⠀⠀⠀⠀

1.Preheat oven to 375 F degrees and spray a 9 x 13 baking dish with the cooking spray. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2.Place a skillet on the stove and set it over medium heat. Sauté the turkey for 5 min, constantly stirring with a spatula. Transfer to a bowl and add Quinta Quinoa. Don’t turn off the stove. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3.Pour the oil in the skillet, and add the basil, thyme, garlic, and onion, stirring everything until it’s brown coloured. Then add spinach and stir until it’s wilted. Turn it off and then transfer to the turkey and quinoa bowl. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4.Add the tomato paste, breadcrumbs, cheese (save some for later), salt and pepper. Combine everything with a wooden spoon. 5.Transfer the bowl content to the baking dish, top it with the remaining cheese, and take it to the oven, baking it uncovered for 25 minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
6.When it’s done, take it out and top it with green onions and diced tomatoes. ⠀⠀⠀⠀⠀⠀
