Roasted Garlic and Potato with Quinoa

Ingredients: ⠀⠀⠀

⠀⠀⠀⠀⠀⠀
1 cup of #Quinta®Quinoa, cooked and warm. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3 potatoes, square chopped (if you prefer to use sweet potatoes, it’s ok!) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 yellow onion, square chopped ⠀⠀⠀⠀⠀⠀⠀⠀⠀
10-15 garlic cloves, peeled and sliced. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups of cooked chickpeas ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of Green onions, square chopped. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt ⠀⠀⠀

Preparation:

⠀⠀⠀⠀⠀⠀⠀⠀⠀
1. Preheat the oven to 425F. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Spread the oil on a glass baking dish, and put the garlic, potatoes, chickpeas, and onions inside. Take them to the oven and roast them for 40-50 minutes. We recommend you to stir it at least once.
3. When it’s ready, take it out the oven and mix it with the Quinta® Quinoa. You can top it with some extra green onions and done! See? It’s so easy to prepare, and it looks so good! Remember that Quinta® Quinoa not only tastes good, but it’s also full of vitamins and minerals!⠀⠀⠀⠀⠀⠀⠀⠀⠀
