We are HUGE quinoa fans, you all know that. But if we had to choose our top 5 favourite foods/ingredients, cheese would be part of this list! How many of you love cheese as much as we do? ⠀⠀

Ingredients:
1 cup of quinoa (uncooked and rinsed) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 teaspoon of dried thyme ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 + 1/2 cups chopped broccoli florets ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of shredded cheddar ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 can of chicken broth ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 lb boneless, skinless chicken breasts, diced in small cubes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3/4 cup of yellow onion, chopped ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 garlic cloves, minced Salt and ground black pepper
⠀⠀⠀⠀⠀⠀⠀⠀⠀
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Preparation: ⠀⠀
⠀⠀⠀⠀⠀⠀⠀
1. Pour the olive oil into a skillet, and heat it on over medium heat on the stove. Add onion, cook them for a couple of minutes, and then add chicken, and garlic, cooking it all together, stirring occasionally.
2. Add the broth, quinoa, and thyme, seasoning with salt and pepper. Bring it to boil and cover it, reducing the heat to low and let it simmer for 12-14minutes. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Uncover the skillet, sprinkle the broccoli, and cover again, letting it simmer for another 10 minutes. 4. When the broccoli is soft and tender, top everything by spreading the cheese. Keep it covered until the cheese is melted. Then turn off the heat, and it’s ready.
