Time: 15min
Servings: 3 dozen
Difficulty: easy
Ingredients
1/2 cup of cooked #QuintaQuinoa
1 cup semi-sweet chocolate chips or chocolate bar tiny chopped.
2 cups of whole-wheat flour
1/2 cup of unsalted butter (softened)
1 cup of brown sugar
1 cup of applesauce
1 cup of raisins (optional)
2 1/2 of cups of oats
1/2 teaspoon of salt
2 teaspoons of ground cinnamon
1/4 teaspoon of ground cloves
1/2 teaspoon of ground nutmeg
1 teaspoon of baking soda
2 large eggs
2 tablespoons vanilla extract
Preparation:
1. Preheat the oven to 375F. Prepare a baking sheet with parchment paper and leave it ready for when it’s needed.
2. Using a large bowl, mix the flour, cinnamon, cloves, nutmeg, and baking soda with a wooden spoon.
3. In a small pot, melt half of the chocolate, setting the stove to low heat. Keep stirring it all the time, so it doesn’t stick to the bottom. Turn it off and let it cool. 4. Using a mixer or a blender, cream together butter and brown sugar until it’s smooth and very well combined. Add the eggs, vanilla, applesauce, and melted chocolate without stopping the mixer. When everything is ready, stir in the raisins if you want them, and pour everything into a bowl.
4. Add the flour mixture into the bowl with the liquid ingredients and mix everything using a spatula. Also add and stir the oats, Quinta® Quinoa, and rest of the chocolate.
5. Now that your dough is ready, pour a tablespoon into the baking sheet until it’s full. Bake the cookies for 12-15 minutes. When they’re ready, remove the sheet from the oven and let them cool. We promise you this delicious and easy to make recipe will be loved by everyone who tries it!
