Ingredients:
- 2 cups of cooked Quinta Quinoa
- 1 medium can of tuna, drained 1 avocado, stoned, peeled and cut into chunks
- 1+1/2 cups of cherry tomatoes, halved
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of baby spinach (better fresh)
- 2 tbsp of mixed seeds (we are using trail mix)
- ½ tbsp of white wine vinegar (or white vinegar)
- 3 tbsp extra virgin olive oil
- juice of 1 lemon
- Salt and Pepper
PREPARATION
1. In a jar, whisk together the oil, lemon juice and vinegar. Add salt and pepper.
2. Now, mix the Quinoa with tuna, avocado and cherry tomatoes. Top with feta, seeds and spinach. To finish, pour the dressing and adjust the salt.
