INGREDIENTS
2 cups of cooked quinoa
3-4 bone and skinless chicken breasts, cut into small pieces
2/3 cups of flour
3 eggs
2 tbsp of water
1 tsp of salt
1/4 tsp of pepper
INSTRUCTIONS
1. Preheat the oven to 425F and prepare a baking sheet, using a non-stick spray. Set aside.
2. Now, you’ll need 3 bowls: in the first one, mix flour, salt, and pepper. In the second, whisk eggs and water. In the third, place the cooked quinoa.
3. Dredge the chicken in the flour mixture, then in the eggs, and lastly in the quinoa. Make sure to coat evenly. Then place each of them on the prepared baking sheet.
4. If you want them extra crispy, spray the nuggets generously with cooking spray
5. Take the sheet to the oven and bake for 15-20 minutes until nuggets are slightly brown.
Extra Tip: These Quinoa Nuggets can also be cooked in your #AirFrier!
