We understand THAT feeling when you’re coming back home, starving and craving something delicious but not so hard to make. Well, @thefoodiephysician has the right option for you! Of course, it includes Quinta Quinoa!
INGREDIENTS
- 3 cups of cooked #QuinteQuinoa (we recommend you cook it using stock instead of water!)
- 1 medium red onion, sliced
- 2 medium zucchini, sliced
- 2 bell peppers (yellow or red), sliced
- 2 carrots, peeled and sliced
- Garlic cloves, peeled (Recipe says 6-8, but we say: as much as you want)
- 3+½ tbsp of olive oil
- 1 tbsp of fresh thyme (or 1 teaspoon dried)
- Salt and pepper
- 1 tbsp of balsamic vinegar
- ½ tsp of Dijon mustard
Preparation
1. Pre-heat oven to 425°F.
2. Place the onion, zucchini, bell peppers, carrots, and garlic on a large roasting pan. Drizzle 1 + ½ tablespoons of olive oil. Sprinkle the thyme and season with salt and pepper. Take this to the oven and roast until veggies are brown coloured, soft and caramelized—about 30min.
3. When the veggies are ready, place the warm quinoa in a big, deep bowl and then add the veggies.
4. Whisk the remaining 2 tablespoons olive oil with the balsamic vinegar and Dijon mustard in a small bowl. Pour the dressing over the quinoa and vegetables and toss to combine. Now imaging having this for dinner after a long day… We can feel you are relaxing already!
