INGREDIENTS
- 1 + 1/2 cup of cooked #QuintaQuinoa 1 carrot, diced
- 4 scallions, sliced
- 2 garlic cloves
- 15 ounce can of black beans, drained and rinsed
- 1/4 cup, Italian seasoned, dried breadcrumbs
- 1 L egg lightly beaten
- 1 tbsp of ground cumin
- Salt and pepper
- 1 tbsp of olive oil
#vegan alternative: -to substitute 1 large egg, mix 1 tablespoon flaxseed with 2 to 3 tablespoons water and let it sit for a few minutes.
PREPARATION
1. Make sure your quinoa is warmed and have it by hand.
2. In a food processor, add the carrot and pulse a few times. Add the scallions, garlic, beans, breadcrumbs, egg (or egg substitute), cumin, salt, and pepper; beat until it’s all combined. Stir in the cooked quinoa. If the mixture is still too crumbly and it’s not sticking together, you can add another egg, max 2.
3. Scoop out the mixture and, with your bare hands, form it into a pattie. Repeat this process with all the mixture.
4. In a large skillet, pour the oil and heat it over medium heat. Carefully add the patties and cook until it’s browned and crisp, about 5min, then turn it down and cook the other side.
And that’s it! How do you like to prepare your hamburgers? We usually add all the veggies and sauces with a side of sweet potato fries, of course!
