You know we always encourage our community to have a healthy life, and that includes, of course, exercise and diet! So, if you don’t know what to have after a morning or late night running, this soup will bring you back to life!
INGREDIENTS
- 3 cups of chicken stock
- 1 cup water
- 1/2 of quinoa
- 2 tsp of canola oil
- 1 onion, diced
- 2 carrots, sliced
- 450 g boneless chicken thighs, chopped
- 70 g sliced mushrooms
- 2 celery sticks, sliced
- 2 garlic cloves, minced
- 2 tsp of fresh thyme (or 1 tsp dried)
- Salt and pepper
- chopped fresh parsley (optional)
PREPARATION
1. Heat the oil in a large pot over medium heat on the stove. Add the onion and carrots. Cook, stirring frequently until onions are translucent. (5min should be enough) Add the mushrooms, chicken, celery and garlic. Cook, stirring frequently, for 5 minutes.
2. Add the stock, water, quinoa and thyme. Season to taste with salt and pepper. Raise the heat to high and bring the soup to a boil. Then cover, turn the heat low and let it simmer for 15 min until quinoa is tender.
And that’s it! Serve with parsley if you want to, maybe a couple of gluten-free bread and enjoy your delicious, super healthy soup!
