INGREDIENTS
1/2 cups of cooked quinoa
1 tablespoon olive oil
½ large red onion, diced
1 orange bell pepper, seeded and diced
1 can of tomatoes, drained and diced
1 medium zucchini, diced
2 cans of black beans, drained and rinsed
1 can of corn, drained
¼ – ½ cup cilantro, roughly chopped
2 tsp of ground cumin
1 tsp of each chilli powder, chipotle powder and garlic powder
½ tsp of onion powder sea salt, to taste
6 – 8 medium/large tortillas
PREPARATION
Filling: In a large pot, heat oil over low-medium heat, add onion and sauté for 4 minutes, add bell pepper and continue to cook for 2 minutes. Add the tomatoes, zucchini and corn, and cook until the veggies are soft. Add the black beans, cooked quinoa, cilantro, cumin, chipotle, garlic & onion powder, and salt; continue to cook until heated through.
Roll: Place tortillas on a flat surface, place a mound of the filling in the center, leaving room all the way around, fold in half, fold up each end, and roll the burrito away from you to close it completely.
