Quinoa Tabbouleh

We love finding new ways to cook traditional recipes! You can always add an extra twist to some old recipe and change it completely! Today, we’re bringing you this delicious #tabbouleh with #quinoa that our friends Sonja and Alex from @acouplecooks shared on their site.

INGREDIENTS:

  • 1 cup cooked quinoa
  • 2 cups finely chopped curly parsley (2 bunches)
  • 1/4 cup chopped fresh mint
  • 3 green onions
  • 2 medium tomatoes, seeded and finely chopped (1 cup)
  • 1/2 English cucumber (1 cup finely chopped)
  • 6 tablespoons lemon juice
  • 1/4 cup olive oil
  • 1/2 teaspoon kosher salt
  • Fresh ground black pepper

PREPARATION:

1. Make sure the #quinoa is at room temperature before starting.

2. Meanwhile, chop the vegetables: Finely chop the parsley, mint, green onion, tomato and cucumber. (if you’re using a standard cucumber and not English cucumber, remove the seeds too.)

3. Prepare the dressing: Juice the lemon and whisk it together with the olive oil. In a large bowl, toss the quinoa and vegetables with the sauce, kosher salt and pepper. Taste and adjust flavours as necessary. Serve immediately or refrigerate for 3 to 4 days.

This was easy, right? One of the most famous Middle Eastern salads, now with a quinoa touch that adds a little extra deliciousness to it! Thanks to @acouplecooks for making it!
