Quinoa Creamy Coconut Oats

Summer is just around the corner, and the one thing we deeply love about this season is the freshness it brings. Everything suddenly turns more colourful and fun, so even your regular meals can have a “summery” twist to them! Here’s a delicious Creamy Coconut Steel Cut Oats + Quinoa with Mango from our friends of @simplyquinoa:

INGREDIENTS:

• 1/2 cup cut oats

• 1/2 cup quinoa

• 2 cups coconut milk

• 2 cups water or more coconut milk

• 1/4 cup maple syrup + more for topping

• 1 mango diced

• 1/4 cup coconut flakes

PREPARATION:

1. Add steel-cut oats, quinoa, milk and water into a small saucepan.

2. Bring to a boil, then reduce to simmer and cook for 18 – 20 minutes until thick and creamy.

3. Stir in the maple syrup and transfer to bowls.

4. Top with mango and flaked coconut (and a drizzle of maple syrup if you’d like) and enjoy immediately.
