Vegan Fried Quinoa

One of the most amazing things about cooking is that there are hundreds of ways to make one dish, add ingredients, or put others aside. This time, the amazing @jessicainthekitchen shared her delicious way of cooking the Fried Quinoa we all know and love.

INGREDIENTS:

• 1 cup tofu scramble
• 2 teaspoons coconut oil
• 3 cups cooked quinoa
• 1 large carrot shredded
• 4 cloves garlic minced
• 1/2 cup frozen peas
• 3 tablespoon liquid coconut aminos
• 2 tablespoons rice wine
• 2 tablespoons green onions plus more for garnish

PREPARATION:

• In a pan over medium-high heat, add one teaspoon coconut oil and add the cooked quinoa.
• Stir quinoa while sizzling until it begins to brown a bit, after a few minutes.
• Reduce heat to medium and add in the carrots, garlic, frozen peas, liquid coconut aminos and rice wine. Stir to combine, and cook for about 8 minutes until carrots have softened.
• Add in the tofu scramble and green onions, stir, and remove from heat. Add more green onions for garnish if you desire.
• Serve immediately and enjoy!
