There’s nothing like a healthy – yet quick – recipe to keep you full and satisfied! Our friends from @simplyquinoa made these Banana Quinoa Waffles, and we just had to share with you guys! We hope you enjoy it as much as we did…
INGREDIENTS:
• 3/4 cup brown rice flour
• 3/4 cup quinoa flour (toasted if desired)
• 1/4 cup arrowroot starch
• 1 teaspoon baking powder
• ½ teaspoon cinnamon
• ⅛ teaspoon salt
• 1 mashed banana
• 2 eggs separated – 1 yolk + 2 whites
• 1 ½ cups almond milk
• 1 teaspoon vanilla
PREPARATION FOR THE QUINOA FLOUR:
• Rinse the quinoa through a fine-mesh sieve for at least 1 minute to remove any remaining saponin. Shake off as much water as possible. • Spread the quinoa on an ungreased large rimmed baking sheet. Bake in a preheated 325F for 12 to 15 minutes until dry, slightly golden and fragrant. Cool completely.
• Place all of the toasted, cooled quinoa in the container of the high-speed blender. Process on high until very finely ground.
PREPARATION:
• Turn on the waffle iron on medium heat.
• In a large mixing bowl, combine the flours, baking powder, spices and salt and set aside.
• In a small mixing bowl, combine the banana, egg yolk, milk and vanilla, and beat until smooth.
• In a separate mixing bowl, beat the egg whites using a hand mixer until stiff peaks form.
• Add the wet ingredients to the dry and gently stir together with a wooden spoon – trying not to over-mix.
• Gently fold the egg whites into the batter – careful not to over mix.
• Lightly grease your waffle iron and pour a scoop of the batter into the bottom and close the top.
• If your waffle iron has a sensor, wait until it indicates that the waffle is ready – checking it before you remove it from the iron – if it’s golden brown, slightly crispy and comes off easily with a fork, you’re good to go!
• Top with fresh fruit, yogurt, maple syrup or whatever toppings your heart desires.
