Curried Cauliflower Quinoa Salad

Our friends from @themodernproper put together this deliciously healthy Curried Cauliflower Quinoa Salad, and we had to share it with you guys!

INGREDIENTS:

• 1/2 cup yogurt

• 2 tbsp olive oil

• 1/3 cup tahini

• 1/3 cup lemon juice

• 1 garlic clove, minced

• 1/2 tsp salt

• 1 small head cauliflower

• 2 tbsp curry powder

• 1/3 cup olive oil

• 2 tsp salt

• 1/4 cup packed fresh cilantro leaves

• 2 cups cooked quinoa

• 2 cups red cabbage, shredded

• 4 cups loosely packed arugula

• 2 cucumbers, thinly sliced

• 1 cup golden raisins

PREPARATION:

• Preheat oven to 425°F.

• In a large bowl, toss cauliflower with olive oil, curry powder and salt.

• Spread onto a baking sheet in a single layer and bake on the centre rack for 40 minutes.

• While cauliflower is cooking, prepare the salad dressing by combining all ingredients in a blender and blending until smooth.

• In a large bowl, toss together cooked quinoa, red cabbage and arugula and divide between 4 bowls. Top each bowl with fresh cilantro, cucumbers, golden raisins and roasted cauliflower.

• Drizzle with yogurt tahini dressing.
