Late morning in bed? Yeah, we’ve all been there! But don’t forget to have breakfast! Here’s a quick and delicious recipe shared by our friends of @bowlsarethenewplates.
INGREDIENTS:
• 2 teaspoons olive oil divided
• 2 cups spinach
• 2 cups cooked Quinta Quinoa
• 1 cup cherry tomatoes halved
• 4 large eggs
• 1 avocado thinly sliced
• ½ teaspoon everything bagel seasoning
• ¼ teaspoon red pepper flakes optional
PREPARATION:
• Heat 1 teaspoon olive oil in a large skillet over medium-high heat.
• Add the spinach, saute 1-2 minutes, then add the cooked quinoa and cherry tomatoes, toss everything together and keep on the stove for 1-2 minutes to heat the quinoa.
• Remove from the heat and divide the quinoa mixture between four bowls.
• Wipe the skillet clean, then add the additional ½ teaspoon of olive oil to the skillet.
• Place it back on the stove over medium heat.
• Once the oil is hot, swirl to cover the bottom of the skillet in oil.
• Add eggs, one at a time, into the skillet.
• Cover and cook until the whites are set, yet the yolks are runny for about 3-4 minutes.
• Place the eggs on top of the bowls with the sliced avocado.
• Sprinkle the everything bagel seasoning over the bowl.
• Optional: add red pepper flakes on top.
