It’s time to enjoy a hot and healthy salad, and we’re loving this Californian style that @tasteofhome created!

INGREDIENTS
- 1 cup of #quinoa, rinsed and well-drained
- 1+1/4 cups of water
- 3/4 cup of canned garbanzo beans or chickpeas, rinsed and drained
- 1/2 cup of crumbled feta cheese
- 1/4 cup of finely chopped Greek olives
- 2 tbsps of fresh basil, minced
- 1 tbsp of olive oil
- 2 garlic cloves, minced
- 1 medium zucchini, square chopped
- 1 tomato, square chopped
- Salt and pepper to taste
PREPARATION
1. Set a large saucepan on the stove and heat oil over medium-high heat. Add the quinoa with the garlic, and stir-fry them for a couple of minutes, until quinoa is toasted. Stir in zucchini and add the water. Bring to a boil, then reduce the heat low, and let it simmer. Add the rest of the ingredients and keep stirring until it’s warmed through. Easy, peasy! Serve immediately and enjoy!
