What originally started off as a plan to make granola bars, turned into these nutritious as heck breaky bars. I’m calling them breakfast bars because the texture just isn’t that crunchy granola bar vibe, but more like those bear paw cookies you might pack in your kids lunch box, only WAY healthier.
Packed with superfoods like quinoa, chia seeds, hemp hearts, collagen, raw nuts and nut butter, these bars contain tons of essential nutrients along with protein and healthy fats! They are naturally sweetened with banana and a little honey, making them an awesome alternative to some of the more processed and sugar packed options on the supermarket shelves.
Ingredients

1 1/2 cups oats

1/2 cup rinsed Quinta quinoa (uncooked)

3 Tbsp chia seeds

3 Tbsp hemp hearts

1 tsp cinnamon

3 scoops (30g) collagen peptides powder

2 ripe bananas, mashed

1 tsp vanilla extract

1/4 cup smooth natural peanut butter

3 Tbsp honey

1/4 cup chopped almonds

1/4 cup chopped walnuts
Directions

Preheat oven to 350 degrees F and line an 8×8 pan or baking dish with parchment paper.

Combine oats, quinoa, chia seeds, hemp hearts, cinnamon, and collagen in a large bowl.

In a medium sized bowl, mash bananas then add in vanilla, peanut butter, and honey, mixing until combined.

Add wet ingredients into dry ingredients until fully combined, then fold in nuts, saving some to sprinkle on top.

Evenly spread mixture into your pan, pressing down and smoothing with a spatula, then top with remaining nuts.

Bake for 20-25 minutes, until edges are lightly browned.

Let cool at room temperature, then cut into 10 bars and enjoy!
