Ingredients
2 chicken breast
2½ cups cauliflower rice
⅔ cup Quinta quinoa
¼ cup chopped scallion
1 large carrot, finely chopped
1 cup of broccoli florets (fresh or frozen)
½ cup peas (fresh or frozen)
2 eggs (scrambled)
¾ cup edamame (fresh or frozen)
¼ cup soy sauce
1 tbsp. lemon juice
2 tbsp. sesame oil
Salt and Pepper
Instructions
If using frozen edamame, peas or broccoli, cook according to package instructions and set aside.
Cut chicken breast into cubes, and cook it on a sauté pan.
Rinse quinoa thoroughly with cold water. Add 1 cup of Quinta Quinoa and 1 ¼ cup of water or broth. Bring to a boil for 2 min and reduce heat and simmer covered for 12 to 14 minutes
When the quinoa has about 4 minutes left, heat 1 tablespoon of the sesame oil and the soy sauce in a large sauté pan over medium heat. Add the scallions and sauté for 1-2 minutes.
Next, add the cauliflower rice to the sauté pan and continue to sauté.
When the cauliflower is slightly soft, add the peas, edamame, broccoli, carrots, and the chicken with the last tbsp. of sesame oil and let cook for 5 minutes (or until broccoli is soft).
Add the cooked quinoa to the sauté pan with the lemon juice.
Cook the scrambled eggs on a separate pan and add it to the pan.
Stir together until everything is heated through and season with extra sesame oil to taste.
