Mexican Quinoa Salad and Jalapeño

Who says all healthy foods have to be boring?

We’ll take you to Mexico with this wonderful and delicious Mexican Quinoa Salad!

Difficulty: Easy

Ingredients

  • 150g of #QuintaQuinoa
  • 1 tomato
  • 1 yellow pepper
  • 150g of black cooked beans
  • 150g of corn
  • 3 tablespoons of olive oil
  • Salt
  • Black pepper
  • Jalapeño pepper (if you’d like to spice it up a bit)

Directions:

  1. Cut the tomato and stir-fry it in olive oil for a couple of minutes.
  2. Add salt, Quinta Quinoa and water (as described on QQ’s cooking instructions on the bag). Wait until the mixture boils and simmer for 10 to 12 minutes until the liquid is absorbed.
  3. Meanwhile, chop the pepper and jalapeno if you want some (without veins or seeds) and stir fry it with olive oil for 10 minutes.
  4. Add the beans and the corn. Cook it for 5 minutes and add salt, black pepper and finally, the quinoa mixture.
  5. Mix, simmer for 5 more minutes and take it out of the fire.
  6. Let it cool and serve it with some olive oil.
  7. You can add the jalapeño if you’d like to taste some spice on your salad.

The best thing about this recipe is not how easy it is to make but also how nutritious and healthy it is.
