Attention, pepper lovers!
This time around we give you a great way to mix the exotic flavour of peppers with a mind-blowing #QuintaQuinoa filling.
These Quinoa Stuffed Peppers are the perfect side dish for parties, meetings, or even a Sunday brunch!

Ingredients:
- 2 cups of cooked #QuintaQuinoa 1/3 cup of sliced blueberries (Yes, you read it right: BLUEBERRIES!)
- 1/4 cup of sliced parsley
- 4 red peppers
- 1 avocado (small)
- 4 tablespoons of purple onion (square chopped)
- 4 tablespoon of olive oil
- Salt and pepper (just a pinch of both)
Preparation:
1. Preheat the oven to 390°F.
2. Cut the peppers in half. Put them in a baking sheet, spread olive oil, salt, and pepper.
3. Put the peppers in the oven and roast them for 20 minutes.
4. While the peppers are being roasted, mix the blueberries, parsley, onion, and already cooked quinoa in a bowl. Add salt to your taste!
5. While the peppers are still hot, fill them with the Quinta® Quinoa mixture. Top it with slices of avocado. Optional: Add an extra teaspoon of olive oil while you’re mixing the ingredients.
