This time, we got creative and tweaked a classic Italian recipe. We didn’t know we needed this Quinta®️ Quinoa Carbonara recipe until we tried it!
Time: 20min
Servings: 2 (or one if you love this recipe as much as we do)
Difficulty: medium
Ingredients:
- 125g of cooked #QuintaQuinoa
- 75g of bacon, chopped
- 1/2 of onion, square chopped (or more if you want to, don’t let anyone stop you)
- 1/4 cup of butter
- 1/4 cup of parmesan
- 2 Large eggs
- 1 garlic clove (to be honest, this is a religious experience, so add all the garlic you heart asks for, just smash it very well)
- Salt to your taste
- As we wanted it to be thick, we added 3 tablespoons of cream. If you like it liquid, ignore this!
Preparation:
1. In a small bowl, mix the eggs with the parmesan cheese and salt. Beat it very well.
2. Using a frying pan, stir-fry the bacon with the onion, garlic, and butter. When toasted, add half of the egg and cheese mixture, turning the heat to low. Keep stirring until it gets thick, adding the rest egg/cheese mixture slowly. If you want to add the cream, here is the moment!
Warning! Be careful with the bacon; it might get… aggressive when cooked with the oil (seriously).
3. Put the cooked quinoa on a plate, and cover it up with the carbonara mixture. Note: You can add all the parmesan cheese you want!
