Quinta Quinoa Coconut Bars

We have always said that Quinta® Quinoa goes amazing with coconut, so today, we bring you this fantastic snack recipe. Includes all our favourites: chocolate, coconut, and, of course, quinoa!

Ingredients:

  • 1/2 cup of cooked #QuintaQuinoa
  • 1/2 cup of water
  • 3/4 cup + 2 tablespoons of coconut oil
  • 1/4 cup of coconut butter or coconut cream concentrate
  • 2 cups of shredded coconut
  • 2 teaspoon of vanilla
  • 3 oz of dark chocolate.

Preparation:

1. Using a small, heavy-bottomed saucepan, place the cups of coconut oil and coconut butter. Set the heat at low-medium and stir them until they’re melted and mixed

2. Remove the saucepan from the heat and add the vanilla, stirring it all together. Add the shredded coconut

3. Pour the mix into a baking dish (8×8 works) and spread it out using a wooden spoon. Take it to the refrigerator until it’s firm (around an hour)

4. Once the time is over, we’re melting the chocolate using the Bain Marie or water bath method: take a cooking pot that fits in the saucepan without touching the bottom of it. There needs to be some space between each other

5. Put the pan on the stove; add about 1 inch of water. Place the pot into the pan, make sure that the water isn’t touching the bottom of the pot

6. Put the chocolate and the tablespoons of the coconut oil in the top pot. Turn the heat to medium; the chocolate will slowly melt. Stir from time to time

7. Once the chocolate and the oil are melt, turn the heat low, and add the cooked Quinta® Quinoa. Mix everything, and then remove the pot from the heat (be careful with the water, it’s going to be hot)

8. Pour the melted chocolate and quinoa mixture over the coconut later, spread it evenly

9. Take it back to the fridge for at least another hour, and then you’ll be able to cut it into pieces and enjoy them!
