We love this recipe as a light, delicious lunch, or early dinner. Maybe a sharing side dish… You name it!

Ingredients:
- 2 cups of cooked #QuintaQuinoa
- 6 cups of baby spinach
- 4 tablespoons of basil pesto
- 1 tablespoon of olive oil
- 1/2 teaspoon of salt
- 1/2 cup of grated parmesan cheese (or as much as you’d like)
Preparation:
Using a heavy-bottomed cooking pot, add the already cooked quinoa, add spinach, pesto, salt, olive oil, and parmesan cheese. Stir to combine everything; spinach should get wilted and the cheese melted. When you get the texture you want, turn it off and serve it in a bowl! Also, you can add more parmesan when you’re about to eat it. And more while you’re eating… Who’s going to stop you?
