Sweet Potato Fritters with Quinta Quinoa

We know how hard it can be to make kids eat some veggies or something that isn’t, you know, chocolate! But we are sure this recipe will make them repeat over and over until none are left! ⠀⠀

Ingredients: ⠀⠀

⠀⠀⠀⠀⠀⠀⠀
1/3 cup of Quinta Quinoa, uncooked and rinsed. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 + 1/2 cups of shredded sweet potato ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of chopped scallions ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 L egg ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tablespoons of coconut oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and pepper ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of water (if needed) ⠀⠀

Preparation: ⠀⠀⠀⠀⠀

1. Set the oven over 350F. In a baking sheet covered with parchment paper, spread the quinoa and bake it for 25 up to 35 min. Don’t forget to check, stir, and move the seeds until they’re golden-coloured. Let them cool for 10min out of the oven.⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Using a food processor or a blender, add the toasted Quinta Quinoa and blend it. You can add 1/4 cup of water if needed. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. In a big bowl, mix, with a wooden spoon, mix the sweet potato with the quinoa flour, scallions, beaten egg, salt, and pepper. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Set a skillet over medium heat on the stove, and add the coconut oil. While it’s warming up, form small patties of the sweet potato and quinoa mixture with your bare, clean hands. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Put the patties into the skillet and cook it until they’re Brown-coloured on each side. When they’re ready, transfer them to a plate, and that’s it. ⠀⠀⠀⠀⠀

P.S. You can always ask your kids to help you form the patties, that way, they will get involved and have a good time! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
