Ingredients: ⠀
⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of cooked #QuintaQuinoa⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of your preferred kind of milk ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 large bunches of broccoli, chopped ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 cups of grated cheddar cheese (vegan or regular) ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 tablespoons of olive oil ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 tablespoon of butter ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and black pepper to your taste ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 clove of minced garlic ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 slice of whole-wheat bread (or gluten-free bread if you wish!)⠀⠀
⠀⠀⠀⠀⠀⠀⠀
Preparation:
1. Preheat the oven to 400F. Cover a baking sheet with parchment paper. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. Roast the broccoli: place them in the baking sheet and toss with 2 tablespoons of olive oil. Sprinkle salt and take it to the oven; bake it for 20 min until the broccoli is tender ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Breadcrumbs: Put the bread into a food processor, or blend it until it has broken into small crumbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. In a small pan melt the butter, cooking it at medium heat on the stove. Add garlic and the breadcrumbs and cook it for 2 minutes, until it’s slightly browned and crispy. Set aside ⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Reduce the oven heat to 350F. Leave it for 5 min and take the baking sheet out. (don’t turn off the oven!)⠀⠀⠀⠀⠀⠀⠀⠀⠀
6. In a big pot, add Quinta Quinoa, salt, pepper, red pepper and stir it very well. Divide the cheese, setting aside 3/4 cup for later, and add the rest to the pot. Pour in the milk and stir.⠀⠀⠀⠀⠀⠀⠀⠀⠀
7. Pour the cheesy quinoa into a 9-inch square baking dish and top with the broccoli; stir it very well. Sprinkle with the reserved cheese and breadcrumbs ⠀⠀⠀⠀⠀⠀⠀⠀⠀
8. Bake, uncovered, for 15 min. Let it cool for at least 10 minutes before serving. ⠀⠀
