Italian cousine is full of tasty flavours! But now we mixed it with our Canadian-Grown Quinoa to make it not only delicious, but healthy as well! Let us know if this recipe blows your mind as it did with ours! ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Ingredients:⠀⠀
⠀⠀⠀⠀⠀⠀⠀
1 cup of #QuintaQuinoa⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 chicken breasts (boneless and skinless), cut crosswise. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of Italian seasoning⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 tablespoon of olive oil⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of AP flour⠀⠀⠀⠀⠀⠀⠀⠀⠀
1 cup of marinara sauce (you can cheat and buy a can!)⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/2 cup of mozzarella, shredded⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of Parmesan, grated ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1/4 cup of basil leaves⠀⠀⠀⠀⠀⠀⠀⠀⠀
2 L eggs, beaten⠀⠀⠀⠀⠀⠀⠀⠀⠀
Salt and pepper to your taste.⠀⠀⠀⠀⠀⠀⠀⠀⠀

Preparation:⠀⠀⠀⠀
⠀⠀⠀⠀⠀
1. Preheat the oven to 400F. Spread the oil on a backing sheet and set aside. (You can use nonstick spray, too! ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2. In a bowl, mix the Quinta Quinoa with the Italian seasoning. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3. Season the chicken breasts with salt and pepper. Now, cover the chicken with flour, then dip it into the eggs and, to finish, dredge in Quinta Quinoa. Make sure the quinoa covers it entirely. (Best way to do it is setting a plate with flour, another one with beaten eggs and a third one with Quinta Quinoa!)⠀⠀⠀⠀⠀⠀⠀⠀⠀
4. Put the chicken breasts onto the baking sheet and take it to the oven. Bake the breasts for 20 min, take it out (don’t turn the oven off!) Top each breast with both cheeses and marinara sauce, and then take the baking sheet back to the oven for another 5-10min, or until the cheeses are melted.⠀⠀⠀⠀⠀⠀⠀⠀⠀
5. Serve and top it with basil leaves. ⠀⠀⠀⠀⠀⠀⠀⠀⠀
