We all love fruits. They’re not only delicious but healthy as well! Thanks to @damn_delicious, now we can enjoy it with the one and only #QuintaQuinoa!
INGREDIENTS:
2 cups of cooked Quinta Quinoa
1 mango, peeled and diced
1 cup of strawberries, quartered
1/2 cup of blueberries
2 tablespoons of pine nuts
Chopped mint leaves, for garnish
FOR THE LEMON VINAIGRETTE
1/4 cup of olive oil
1/4 cup of apple cider vinegar
Zest of 1 lemon
3 tablespoons of lemon juice
1 tablespoon of sugar / sweetner
PREPARATION:
1. Let’s start with the vinaigrette: in a glass jar, whisk together olive oil, apple cider vinegar, lemon zest and juice, and sugar.
2. Now, in a large bowl, add the quinoa, mango, strawberries, blueberries and pine nuts. Stir in the vinaigrette. Serve and remember to garnish with mint leaves.
