INGREDIENTS
BOTTOM LAYER
1 cup of cooked and toasted #QuintaQuinoa
3/4 cup of graham cracker crumbs
1/2 cup of unsalted butter, diced
1/4 cup of sugar
5 Tbsp of unsweetened cocoa powder
1/8 tsp salt
1 L egg, lightly beaten
1/2 cup of almonds, finely chopped
1 cup of sweetened shredded coconut
FILLING
1/2 cup of unsalted butter, softened
2 – 3 Tbsp of heavy cream
1/4 cup of powdered milk
1 tsp vanilla
1 3/4 cups of powdered sugar
TOP LAYER
4 oz semi-sweet chocolate, chopped tiny
2 Tbsp of unsalted butter
PREPARATION
1. Prepare a baking dish, spread some butter and line with parchment paper. Set aside.
2. For the bottom layer: place a heatproof bowl on a saucepan with simmering water. Set the stove over medium-low heat and add the butter, stirring it until it’s melted. Then remove it, add sugar, cocoa powder and salt. Start to whisk it all together and pour the beaten egg. Set it back to the saucepan and cook until it has thickened.
3. Remove from the heat and add the graham cracker crumbs, #QuintaQuinoa, coconut and almonds. Stir and then pour the mixture into de baking dish. Let it chill.
4. For the filling: using a mixer, add the powdered milk and the heavy cream to the bowl and mix it up at high speed. Add the butter, powdered sugar, and vanilla and beat it up until it’s very light and fluffy. Spread the mixture evenly over the bottom, crunchy layer (this one can’t be warm!) and take it to the freezer.
5. For the top layer: melt the chocolate with the butter. You can do this in a microwave-safe bowl, in 20sec intervals, stirring each time until it’s melted and shiny).
6. Spread over the filling layer quickly (the chocolate will set and dry). Let it chill again until it’s all set. Cut into squares and save in an airtight container… If there is any to save! It tastes better at room temperature, but remember to keep them in the fridge!
