INGREDIENTS
1 cup of Quinta Quinoa, rinsed
1 medium onion, chopped
1 medium carrot, finely chopped
1 tsp of olive oil
1 garlic clove, minced
1 can of chicken broth or vegetable broth (if you’re going veggie, don’t use the salt!)
1/4 cup water
1/4 tsp salt
PREPARATION
1. Place a small saucepan on the stove and heat the olive oil over medium-high heat. Add the onion and carrot, fry them for a couple of minutes, and then add garlic and stir for a minute more. When garlic is slightly toasted, stir in the broth, water and salt; bring to a boil.
2. Add the quinoa. Reduce the heat and let it simmer for 12-15 minutes or until liquid is absorbed. Remove from the heat and serve! As fast as it’s to read, it’s as fast it takes to make it! The perfect dish to prepare when you want to delight your family or loved ones on a Sunday evening.
