INGREDIENTS
- 4 cups of cooked and chilled quinoa
- 3 Tbsp of butter, divided
- 2 L eggs, whisked
- 2 medium carrots, peeled and diced
- 1 small white onion, diced
- 1/2 cup of frozen peas
- 3 garlic cloves, minced
- 3 green onions, thinly sliced
- 3–4 Tbsp of soy sauce, or more to taste
- 1/2 tsp of toasted sesame oil Salt and pepper
- 2 tsp of oyster sauce (optional)
INSTRUCTIONS
1. Place a large skillet on the stove over medium heat and melt 1/2 tablespoon of the butter. Add the whisked egg, and cook until it’s scrambled, stirring occasionally. Remove the egg, and transfer to a plate.
2. In the same skillet, add another tablespoon of butter and heat until it’s melted. Add the carrots, onion, peas and garlic, and season with salt and pepper. Sauté until the onion and carrots are soft. Turn the heat high, and add the remaining 1 1/2 tablespoons of butter. Once it’s melted, add the cooked quinoa, green onions, soy sauce and oyster sauce (if using), and stir-fry the quinoa for a couple of minutes.
3. When the quinoa is golden-brown, add in the eggs and the sesame oil, stir to combine and remove from the heat. And that’s it!
