We love to encourage our community to have the healthiest life possible, so we found this fantastic recipe by @peasandcrayons and wanted to share it because it has all the healthy ingredients we LOVE!

INGREDIENTS
- 3 cups of cooked quinoa salt and pepper to taste
- 3 cups of chopped fresh spinach
- 1/2 cup of tomatoes, diced
- 1/2 cup corn (canned or steamed from frozen)
- 1/3-1/2 cup crumbled feta cheese
- 1/4 cup of chopped green onion
LEMON DILL DRESSING
- juice of 1 large lemon
- 1/4 cup avocado oil
- 1/2 Tbsp of white wine vinegar
- 1/2 tsp of sea salt
- 1/4 tsp of garlic powder
- 1/8 tsp of each black pepper and dried dill
PREPARATION
1. Let’s prepare the dressing: combine de lemon juice, avocado oil, wine vinegar, salt, garlic powder, black pepper and dill in a small bowl and whisk together.
2. Pour the chilled quinoa into a glass bowl, add the spinach, corn, tomatoes, green onion and feta cheese. Drizzle the dressing all over the salad, mix well and serve it at your favourite temperature. As a tip, you can add the spinach to the last few minutes of Quinoa’s cooking if you prefer to have it as a warm salad!
