This side-dish is made with, literally, whatever you have left in your pantry and fridge! Reducing waste and, in the process, having a delicious plate should be the definition of heaven, right? Thanks to the chef, @THEOVENLIGHT!
INGREDIENTS
2 cups of cooked quinoa
2 cup of french bread (cut into small cubes)
3 Tbsp of butter
1 shallot, chopped
4 bacon slices
3 cups of fresh spinach
1/2 cup of parmesan
PREPARATION
1. Preheat the oven to 425°F. Line a baking sheet with foil and bake the bacon for 18-20 minutes, until they’re crispy. Remove from the oven, drain on a plate covered with a paper towel and, when they had cooled down, crumble and set aside.
2. Reduce the oven temp to 350°F. Place bread cubes on a baking sheet and toss with olive oil and a pinch of salt. Take it to the oven to crisp up. About 8-10 minutes. Remove and set aside.
3. Place a large skillet on the stove, set over medium heat and melt the butter. Add chopped shallot, and sauté until fragrant and translucent. Add bread cubes to the skillet, mix with butter and shallot until all is warm and combined (about 3 minutes). Turn off and set aside.
4. In the same pot where you prepared the quinoa, add: bread mixture, spinach, bacon and cheese, and set it over medium heat (reserve a little bit of bacon and cheese for topping). Heat through until spinach is wilted and the mixture is hot. Turn it off.
5. Transfer everything to a deep bowl, add salt and pepper to taste. Top with the rest of the bacon and cheese.
Once you’ve tried it, it could go from a side-dish to the main dish on a Sunday, lazy evening!
